Eating tortillas while watching the waves is fun. We make classic flour tortillas. You can make your own at home with our recipe. Ingredients are available in Ocean Grocery, next to Eric's Sea Bar. You need a roller or a tortilla press to make them.

3 cups bread flour
1.5 teaspoons kosher salt
4 tablespoons lard (or manteca) plus 2 teaspoons vegetable shortening
1.5 cups warm water

Thirty Minutes Makes a Dozen Flour Tortillas

Place the flour and salt in a bowl - mix until smooth. Fold in the shortening. Slowly add water, and mix. Scatter flour on waxed paper. After rolling, shift the uncooled tortillas to a hot, dry pan. Heat for 10 seconds.

A typical flour tortilla should be about seven inches wide. Our recipe was donated by a famous chef and uses white flour.

Using a spatula, lift the tortilla, and unload it in a cloth-lined basket. The process is repeated and there should be brown spots on each tortilla.

At our restaurant, we use a tortilla press, but it doesn't take much longer with a hand roller. We make them with a favorite brand of flour - ask us next time you stop in and we'll give you a flour sample to make your own. (words215tortilla10flour10make5)
